KICKIN MANGO SALSA


INGREDIENTS:

3 Ripe Mangos Diced
1 Red Onion Chopped
3 Jalepenos Seeded & Chopped
12 Roma Tomatoes Chopped
2 Garlic Cloves Smashed & Chopped
½ cup Chopped Cilantro
1 Tbls. Cumin
1 Tbls. Chili Pepper
Juice From 3 Limes
1 Tbls. Olive Oil
Salt & Pepper

DIRECTIONS:

Chop tomatoes and place in sieve/colander within a bowl to catch the juice. Salt tomatoes and toss. Set aside.
In a large glass bowl put diced mangos,finely chopped onion, chopped cilantro, garlic, cumin, chili pepper, lime juice, salt, pepper and olive oil. Toss to coat. Add drained tomatoes. Mix. Put in fridge for an hour. The more it sits the better. Serve with chips. Great on fish or chicken.

Creamy Green Bean Casserole



RECIPE INGREDIENTS


4 Cans of French Cut Green Beans
1 8oz. Sour Cream
1 can of Cream of Mushroom Soup
1 16 oz. Shredded Cheese
1 Sleeve of Ritz Crackers
1 stick of melted butter


DIRECTIONS


Mix together Sour cream & mushroom soup. Drain Green beans & put in a Casserole Dish. Pour Sour crem mix over the beans. Put cheese on top, Then crush Ritz crackers on top of cheese. Spoon melted butter over crackers. Bake
375 for 20-25 min.

Zucchini Salad


Ingredients

4 medium zucchini, sliced (about 5 cups)
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
2 jars (4-1/2 ounces each) sliced mushrooms, drained
1 can (2-1/4 ounces) sliced ripe olives
1 can (8 ounces) sliced water chestnuts, drained
1 envelope ranch salad dressing mix
1 cup Italian salad dressing
Leaf lettuce, optional


Directions

In a bowl, combine the zucchini, artichokes, mushrooms, olives and
water chestnuts. Combine the ranch dressing mix and Italian
dressing; pour over vegetables and toss to coat. Cover and
refrigerate for several hours or overnight. Drain; serve in a
lettuce-lined bowl if desired. Yield: 8 servings.

Fried Wontons

10 ounces of Wonton wrappers
1 pound of ground beef
1/2 pound of ground pork
1/2 cup of carrots, peeled and grated
1 Head bok choy, chopped
1 whole onion, chopped
2 cups of bean sprouts, chopped
1/2 cup of soy sauce
3 tablespoons of brown sugar
3 tablespoons of cornstarch
1 tablespoon of rice winealt
1/4 cup of green onions, chopped
Black pepper, taste

In a wokalt, combine the ground beef and pork, carrots and onions. Cook over medium heat. As meat begins to brown, add remaining vegetables, soy sauce, and sugar. Continue cooking until vegetables are tender and liquid has mostly evaporated. Combine cornstarch with rice, wine and 2 tablespoons cold water. Season meat with pepper and green onions. Stir in cornstarch mixture and cook 1-2 minutes. Place one teaspoon of filling into center of a wonton wrapper. Moisten edges with water, fold four corners into center and seal. Place each wonton as it is finished on a plate covered with damp towel to prevent drying. Continue filling until all wrappers are used. Fry in hot oil on each side until lightly browned. Drain and serve.

Quinoa with Veggies


Quinoa with Veggies

makes 4 servings
Ingredients:
1 cup quinoa
3 cups water
1 pinch salt
3 tablespoons olive oil
3 cloves garlic, minced
1 red bell pepper, chopped
1/2 cup corn kernels
1/2 teaspoon cumin
1 teaspoon dried oregano
salt and pepper to taste
2 green onions, chopped

Instructions:

Bring the quinoa, water, and 1 pinch of salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, about 20 minutes. Once done, drain a mesh strainer, and set aside.

Meanwhile, heat the olive oil in a saucepan over medium heat. Stir in the garlic, and cook until the garlic softens and the aroma mellows, about 2 minutes. Add the red pepper, and corn; continue cooking until the pepper softens, about 5 minutes. Season with cumin, oregano, salt, and pepper, and cook for 1 minute more, then stir in the cooked quinoa and green onions. Serve hot or cold.

BROCCOLI SALAD

Ingredients:

-1 head of broccoli
-1.2 lb of bacon, cooked and crumbled
-1 small onion, diced (you can use red onions for color but I prefer sweet yellow)
-2/3 cup shredded cheddar cheese
-1 cup mayonnaise
-2 tbsp sugar
-2 tsp lemon juice

Instructions:

1. In a small bowl, mix mayo, sugar and lemon juice.
2. Mix well and set aside.
3. Chop broccoli florets into small pieces and put into medium sized mixing bowl.
4. Add diced onion, shredded cheese, and crumbled bacon to the broccoli.
5. Add the dressing mix to the other ingredients and mix well.

Southern Baked Beans


Ingredients

1 large onion, diced
2 (16-ounce) cans pork and beans
3 tablespoons prepared yellow mustard
1/4 cup maple syrup
1/4 cup light brown sugar
4 tablespoons ketchup
1 tablespoon lemon juice
1/2 pound bacon strips, cut into 1/2-inch pieces


Directions

Preheat oven to 350 degrees F.

In a Dutch oven, mix onion, pork and beans, mustard, maple syrup, light brown sugar, ketchup, and lemon juice. Top with the bacon pieces. Bake, covered, for 45 to 60 minutes.

Layered Summertime Salad

Ingredients

2 cups uncooked spiral pasta
1 cup mayonnaise
2 Tbsp. lemon juice
1 tsp. sugar
1/2 tsp. garlic powder
1/2 cup sliced green onions
4 bacon strips, cooked and crumbled, divided
4 cups torn romaine lettuce
1 cup fresh snow peas, trimmed and halved
1 cup fresh cauliflowerets
1 cup fresh broccoli florets
1 large sweet red pepper, chopped
1/2 cup shredded Swiss cheese

Directions

Cook pasta according to package directions. Meanwhile, in a small bowl, combine the mayonnaise, lemon juice, sugar, and garlic powder; set aside. Drain pasta and rinse in cold water; toss with onions and half of the bacon. In a large salad bowl, layer half of the romaine, pasta mixture, peas, cauliflower, broccoli, red pepper, mayonnaise, mixture and cheese. Repeat layers. Sprinkle with remaining bacon. Cover and refrigerate until serving.

Healthified Mexican Bean Salad

2 cans (15 oz each) Progresso® black beans, drained, rinsed
1 can (15 oz) Progresso® dark red kidney beans, drained, rinsed
1 can (11 oz) Green Giant® SteamCrisp® Niblets® no-salt-added whole kernel sweet corn, drained
1 1/2 cups grape tomatoes, each cut in half
1 cup chopped green bell pepper (1 medium)
1 cup chopped red bell pepper (1 medium)
1/2 cup sliced green onions (8 medium)
1/4 cup chopped fresh cilantro



Directions

Step1
In large bowl, mix salad ingredients. In small bowl, mix dressing ingredients with wire whisk until blended.
Step2
Pour dressing over salad; toss to mix. Cover and refrigerate at least 4 hours to blend flavors.
