I will definitely have one when I move. Right now, in Brooklyn, no way can I have a garden, we have no grass at all. huhhwtff

Cranberry Syrup


Yield: 1 quart

Ingredients

2 1/2 cups sugar
1 3/4 cups hot water - could be part apple juice
3 1/2 C. fresh cranberries

Instructions

Combine sugar and water in a small saucepan. Bring to a boil; reduce heat and simmer, uncovered, until sugar dissolves, stirring occasionally.
Add cranberries and simmer for 30 minutes. Remove from heat and let mixture cool before refrigerating, mixture will thicken as it cools. It is a really thin syrup but has lots of flavor.

Watermelon Rind Pickles

7 pounds of watermelon rind
1 tablespoons of slaked lime
1 gallon of water
4 pounds of sugar
1 pint of vinegar
2 sticks of cinnamon

Peel and cut the rind into 1 1/2 inch pieces, then soak overnight in a mixture of lime and water. Wash several times, then place in a large cooking pot. Cover with water and cook until tender, then drain. Mix the sugar, vinegar and cinnamon and bring to a boil. Cool. Pour over the rind and let stand overnight. Bring to a boil and boil until the rind is transparent. Pack the rind into hot sterilized jars, then fill with hot syrup. Seal the jars. Makes 4 quarts

Colorful Fruit and Melon Salad

1/4 teaspoon of vanilla
2 tablespoons of sugar
1/2 cup of whipped cream
1 can of fruit cocktail, drained
1 cantaloupe or honeydew melon
Lettuce
Maraschino Cherries

Fold the vanilla and sugar into whipped cream, then fold into fruit cocktail. Peel and slice the cantaloupe. Place slices of cantaloupe on lettuce leaves and fill centers with fruit mixture. Top each serving with a cherry.

Spinach-and-Watermelon Salad

Yield: 5 servings (serving size: 2 cups)

1 tablespoon honey
1 tablespoon balsamic vinegar
1 tablespoon water
1 1/2 teaspoons olive oil
1/2 teaspoon lemon juice
1/8 teaspoon dried tarragon
Dash of salt
4 cups torn spinach
4 cups thinly sliced romaine lettuce
2 cups (1-inch) watermelon balls $
1 cup sliced strawberries
1/2 cup sliced cucumber
1/4 cup thinly sliced onion, separated into rings

Preparation

Combine first 7 ingredients in a bowl; stir well with a whisk. Set aside.
Combine spinach and remaining ingredients in a large bowl. Drizzle dressing over salad, and toss gently to coat. Serve immediately.

Garbage Salad





What You'll Need:

1 head iceberg lettuce
1 head romaine lettuce
2 tomatoes, cut into chunks
6 (1-ounce) slices provolone cheese, cut into strips
6 ounces Genoa salami, cut into strips
1 (14-ounce) can hearts of palm, drained and cut
1 (14-ounce) can artichoke hearts, drained and quartered
1 (7-ounce) jar roasted red peppers, drained and cut into strips
1 (5.75-ounce) can large pitted black olives, drained
1 (16-ounce) jar peperoncini, drained
2 1/2 cups prepared vinaigrette dressing
What To Do:

Wash and dry lettuce and tomatoes then cut into bite-sized pieces. Place in a very large mixing bowl with remaining ingredients except dressing; toss to mix well.

Pour desired amount of dressing over salad; toss to coat. Serve immediately.

Summer BLT Salad


Ingredients

1 lb. bacon cooked until crisp (can use bacon bits but I prefer the real thing)
1 box of cooked noodles (any kind, I use the spiral ones)
1 head of lettuce washed and broken into bite size pieces
2-3 ripe tomato cut into bite size pieces
mayo
croutons (optional)


Directions


Put bacon, lettuce, tomato and cooked noodles in a bowl. Add enough mayo to coat everything. You can add some salt and pepper if you want. Taste to make sure it is to your liking, then add croutons on top. Makes a great summer salad.

Broccolli Pasta Toss

4 servings

Ingredients:

2 cups Broccoli florets
4 oz. Fettuccine, broken up
1 Tbsp. Oil, cooking
3 Tbsp. Parmesan cheese, grated
1 tsp. Sesame seeds, toasted
1/8 tsp. Garlic powder

Directions:

In a large saThriftyFun.comucepan cook broccoli and pasta in a large amount of boiling water for 6-8 minutes or just until tender, stirring once or twice. Drain. Add oil to pasta mixture and toss. Add cheese, sesame seeds, garlic, and pepper to taste. Toss gently to coat. Serve immediately.

I am really loving all the recipes you posted. I'd like to share one of my favorites. Hope you get the chance to try it.

Chicken, Bacon & Avocado Chopped Salad

Total Time: 20 minutes
Yield: 4-6 Servings

Ingredients:

Salad Ingredients:

1. 2 boneless, skinless chicken breasts
2. Salt and pepper
3. 1 Tbsp. olive oil
4. 8 cups chopped Romaine lettuce
5. 8 slices bacon, cooked and diced
6. 4 ounces blue cheese, crumbled
7. 2 avocados, pitted and diced
8. 2 roma tomatoes, diced
9. 1/4 cup garlic vinaigrette
10. 1/4 cup chopped green onions

Garlic Herb Vinaigrette Ingredients:
1. 1/2 cup apple cider vinegar
2. 3 garlic cloves, minced
3. 1 Tbsp. Dijon mustard (optional)
4. Pinch of salt and freshly-cracked black pepper
5. 1 Tbsp dried Italian seasonings
6. 1 1/2 cups extra virgin olive oil

Method:

To Make The Salad:

Season chicken breasts on both sides with salt and pepper. Heat oil in a large skillet over medium-high heat and add chicken. Cook for 3 minutes per side, or until the chicken is cooked through and no longer pink inside. (Cooking will vary depending on the thickness of the chicken.) Remove chicken and let rest for at least 10 minutes. Dice chicken into small pieces.

Add the diced chicken, lettuce, bacon, blue cheese, avocados and tomatoes to a large bowl, and toss until combined. Drizzle or toss with garlic vinaigrette and serve immediately.

To Make Vinaigrette:

Whisk all ingredients together until combined.
