Savory Pull-Apart Bread

Ingredients

10 sun-dried tomato halves, (not packed in oil)
2 cups Original Bisquick® mix
1 package feta cheese, coarsely crumbled (8 ounces)
3/4 cup milk
3/4 cup roasted red bell peppers, from 7-ounce jar, drained and finely chopped
1 tablespoon chopped fresh oregano leaves or 1 teaspoon dried oregano leaves
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1 clove garlic, finely chopped
2 tablespoons olive or vegetable oil


Directions
1.
Heat oven to 425 degrees F. Grease square pan, 9x9x2 inches. Cover dried tomatoes with boiling water. Let stand 10 minutes; drain. Finely chop tomatoes.
2.
Mix Bisquick mix, tomatoes, half of the cheese and the milk in medium bowl until dough forms. Mix remaining cheese, the bell peppers, oregano, basil, garlic and oil in small bowl. Drop half of the dough by tablespoonfuls closely together in irregular pattern in pan. Spoon half of the cheese mixture over dough. Drop remaining dough over cheese mixture. Top with remaining cheese mixture.
3.
Bake about 20 minutes or until golden brown. Serve warm.

Orange Bread

Ingredients

3 cups all-purpose flour
1 1/2 teaspoons salt
2 teaspoons baking powder
2 1/2 cups sugar
1 1/2 cups milk
1 cup vegetable oil
3 large eggs
2 tablespoons fresh orange zest
1 1/2 teaspoons vanilla extract
1/2 teaspoon orange extract

Directions
1.
Preheat oven to 350 degrees. Grease and flour 2 (9-x-5-x-3-inch) loaf pans.
2.
In a medium bowl, sift together flour, salt, and baking powder.
3.
In a separate bowl, combine sugar, milk, oil, eggs, orange zest, vanilla, and orange extract. Beat at medium speed with an electric mixer until well combined. Gradually add flour mixture to sugar mixture, mixing until batter is smooth. Pour batter into prepared pans.
4.
Bake for 30 minutes; cover loosely with aluminum foil and bake for an additional 30 minutes, or until a wooden pick inserted in center comes out clean.
5.
Let Cool in pans on a wire rack for 10 minutes; remove from pans and cool completely.

Ingredients

1 1/2 cups fresh or frozen cranberries
2 1/2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
1 cup buttermilk
1/3 cup butter, melted
1 - 1 1/2 teaspoons almond extract
2/3 cup chopped almonds, toasted if you like


White Chocolate Glaze:

1/4 cup white baking pieces
3 tablespoons powdered sugar
1 tablespoon French vanilla liquid coffee creamer


Directions
1.
Rinse cranberries in cold water; drain. Grease bottom and 1/2 inch up the sides of one 9x5x3-inch loaf pan. Line bottom of pan with waxed paper; grease. Set aside.
2.
In a large bowl, combine flour, sugar, baking powder and salt. Make a well in center of flour mixture; set aside.
3.
In a medium bowl, combine eggs, buttermilk, melted butter and almond extract. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in cranberries and the chopped almonds. Spoon batter into prepared pan, spreading evenly.
4.
Bake in a 325 degrees oven about 1 hour 15 minutes or until a wooden skewer inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Wrap and store overnight before slicing.
5.
Before serving, unwrap bread. Drizzle with White Chocolate Glaze and, if desired, sprinkle with additional toasted almonds. Makes 1 loaf (12 slices).
White Chocolate Glaze:
1.
In a small, microwave-safe bowl, microwave white baking pieces on 50 percent power (medium) for 1-1/2 to 2 minutes or until melted and smooth, stirring once or twice. Stir in powdered sugar and French vanilla liquid coffee creamer. If necessary, stir in additional coffee creamer, 1 teaspoon at a time, until glaze reaches drizzling consistency. Makes 1/4 cup.

Fruited Pumpkin Loaf




Tis the season — for pumpkin bread, and that’s a good reason to be jolly. Nothing quite captures the culinary spirit of the holidays on the table like these slightly spicy, deeply rich loaves.

Ingredients


2 eggs
2/3 cup water
1/2 cup apricot nectar
3 tablespoons cooking oil
1 14 ounce package pumpkin quick bread mix
1 cup chopped pecans, toasted
1/2 cup snipped dried apricots
1/2 cup dried cranberries
Apricot Icing (see recipe below) (optional)
Snipped dried apricots (optional)

Apricot Icing

3/4 cup powdered sugar
3 - 4 teaspoons apricot nectar


Directions
1.
Preheat oven to 350 degrees F. Grease the bottom and 1/2 inch up sides of an 8x4x2-inch loaf pan or three 5-3/4x3x2-inch loaf pans; set aside.
2.
In a large bowl, beat eggs with a whisk; whisk in the water, nectar, and oil. Using a wooden spoon, stir pumpkin quick bread mix into egg mixture until combined. Stir in pecans, the 1/2 cup apricots, and the cranberries.
3.
Spoon batter into prepared pan(s); spread evenly. Bake 8x4x2-inch pan for 55 to 65 minutes or 5-3/4x3x2-inch pans for 30 to 35 minutes or until a wooden toothpick inserted near the center(s) comes out clean.
4.
Cool in pan(s) on wire rack(s) for 10 minutes. Remove from pan(s). Cool completely on wire rack(s). Wrap and store overnight before slicing.
5.
If desired, pour Apricot Icing over bread and sprinkle with additional snipped apricots. Makes 1 large or 3 small loaves (16 to 18 servings).
Apricot Icing
1.
In a small bowl, stir together powdered sugar and enough apricot nectar to reach drizzling consistency.

Yhis is mouth-watering, but doctors advised us not to take most of these food ingredients for health reasons. Something like milk is a good source of cholesterol and a lot others enlisted here. The nutrients in the sun-dried tomato is no more there unless used when still fresh and not dried.

They seem fine to me too! Anne, Bisquick is like a pancake flour. You can make biscuits, pancakes and many other recipes with it.

Ingredients

2 cups Original Bisquick® mix
1/2 cup cold water
1/2 teaspoon cracked black pepper
5 tablespoons shredded Parmesan cheese (about 1-1/4 ounces)
1 tablespoon butter or margarine, melted
Additional cracked black pepper, if desired

Directions
1.
Heat oven to 450 degrees F. Lightly grease large cookie sheet with shortening or cooking spray. In medium bowl, stir together Bisquick mix, water, 1/2 teaspoon pepper and 2 tablespoons of the cheese until soft dough forms.
2.
Sprinkle work surface with Bisquick mix. Place dough on surface; roll to coat. With rolling pin, roll into 10x8-inch rectangle. Brush with butter. Sprinkle with remaining 3 tablespoons cheese; press in gently. Cut crosswise into 12 strips. Gently twist each strip. Place 1/2 inch apart on cookie sheet. Sprinkle with additional pepper.
3.
Bake 10 to 12 minutes until light golden brown. Serve warm.
Tip:
1.
High Altitude (3500-6500 ft): No change.
