BAKED CHICKEN CUTLET ROLLS

1/4 lb. melted butter
Chicken cutlets (number of cutlets determines number of rolls)
Thin smoked ham slices (one per each cutlet)
Sliced Mozzarella cheese (one slice per cutlet)
Fresh tomato wedges (one per cutlet), tossed with sage

For approximately 4 cutlets, mix: 1 cup bread crumbs, 2 tablespoons
parsley, 1/2 cup grated Parmesan cheese. Pound each cutlet thin. Lay a
slice of ham, a slice of Mozzarella and then a tomato wedge on each
cutlet. Roll and secure with a toothpick.

Dip in melted butter and then in bread crumb mixture. Place in baking
dish. Pour any leftover melted butter over cutlet rolls in baking dish.
Bake uncovered at 350 degrees for 40 to 45 minutes.

STUFFED BISCUITS

1 can Hungry Jack biscuits
1 8 oz block cream cheese, softened
1/4 cup finely chopped black olives
1/2 cup finely chopped onion
3/4 cup finely chopped deli ham
Cheddar cheese


Press biscuits into lightly greased muffin cups. Combine cream cheese,
olives, onions, and ham; mix well.

Drop a teaspoon of the cheese mixture into each biscuit cup and top with
the cheddar cheese.

Bake at 400°F degrees for 8-10 minutes.

Ingredients

1 (16 ounce) package dry ziti pasta
1 pound lean ground beef
1 onion, chopped
2 (28 ounce) jars spaghetti sauce
6 ounces sliced provolone cheese
6 ounces sliced mozzarella cheese
1 1/2 cups sour cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil
Directions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet, brown beef over medium heat. Add onions; saute until tender. Drain off fat and add spaghetti sauce; simmer for about 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
In a lightly greased 2 quart baking dish, place about half of the pasta; top with a layer of provolone and mozzarella cheese slices. Spread on a layer of half the spaghetti sauce mixture and sour cream.
Cover with remaining pasta, cheese and sauce; sprinkle a layer of Parmesan cheese and fresh basil.
Bake in preheated oven for about 30 minutes or until cheese and sauce are bubbly; serve.

Double Decker Tacos

Double Decker Tacos

Ingredients

1 pound ground beef
1 (1 ounce) packet taco seasoning mix, divided
1 (16 ounce) can refried beans
2/3 cup water
12 prepared crisp taco shells

2 avocados
1 tablespoon sour cream
1 fresh lime, juiced
salt and black pepper to taste

12 (7 inch) flour tortillas
2 cups shredded Cheddar cheese
1 cup shredded lettuce
1 large tomato, chopped
1/4 red onion, chopped
1/2 cup sour cream
Directions

Place the ground beef in a skillet over medium heat, and sprinkle about 3/4 of the packet of taco seasoning over the meat. Cook and stir the ground beef, breaking it up as it cooks, until the beef is browned and crumbly, 10 to 15 minutes. Drain the excess grease.

Mash the refried beans with the water in a small saucepan, and sprinkle with the rest of the seasoning packet. Heat the refried beans over low heat until simmering.

Preheat oven to 300 degrees F (150 degrees C). Place the crisp taco shells on a baking sheet, and warm them in the preheated oven for 3 to 5 minutes.
To make the guacamole, peel, seed, and mash the avocados in a bowl with 1 tablespoon of sour cream, the lime juice, and salt and pepper to taste, and set aside.

To build the tacos, spread each flour tortilla with about 2 tablespoons of heated refried beans. Wrap the tortilla gently around a crisp tortilla shell. Spread about 2 tablespoons of ground beef along the bottom of the crisp shell, and sprinkle about 2 tablespoons of shredded Cheddar cheese on top of the meat. Top the cheese with shredded lettuce, a sprinkle of chopped tomato and onion, and a dollop of sour cream and guacamole.

Tacos were great. We actually have them quite often since they are so easy to do. I like the crunchy shells and my son likes soft shells so we just use both, lol. I buy taco seasoning from Costco in a big jar instead of those little packets, we use it for lots of things. Another thing we make a lot is chicken fajitas! YUM

Tacos were great. We actually have them quite often since they are so easy to do. I like the crunchy shells and my son likes soft shells so we just use both, lol. Yummy!!! I like BOTH the soft and the hard shells, so I make both also! I always make refried beans with my tacos too! :clap

I don't mind the hard tacos but none of the rest of the family do so we usually have the soft ones - we don't usually bother with the refried beans. Yeah they are an easy dish aren't they Judy.

Labell's Spaghetti Casserole

<DIR><DIR>1 Medium Onion, chopped
1 Pound Ground Beef
1 Can Tomato Sauce, 15 ounce size
1 Can Tomato Sauce, 8 ounce size
2 1/2 Cups Water
1 1/2 Teaspoons Italian Seasoning
1 Teaspoon Garlic Salt
1/4 Teaspoon Pepper
1/2 Pound Spaghetti, uncooked, broken
1 8 Oz Can Tomato Paste

Brown beef and onions in 2 quart casserole in microwave on high 6-8 minutes until no longer pink. Stir well every minute or so to break up chunks. Drain off excess fat. Stir in Tomato sauce, paste, seasonings and water. Cover. Microwave on HIGH 4-5 minutes or until hot and bubbly. Stir in broken, uncooked spaghetti. Cover and microwave at 50% power for 20-25 minutes or until spaghetti is tender. Stir several times during cooking

Baked Penne and Cheese with Spinach

Ingredients:
3 cups penne or 3 cups other tubular pasta
6 ounces fresh baby spinach leaves, washed, uncooked (i used a small box of frozen spinach)
4 tablespoons butter
1 medium onion, chopped
1 lb sliced mushrooms
1/4 cup flour
2 cups milk
2 cups sharp cheddar cheese, grated
1 cup cream
1/2 teaspoon ground nutmeg
1/2 teaspoon fresh ground pepper


Directions:
1 Cook the pasta in salted boiling water until it is very al dente.
2 (You want it slightly undercooked.) Drain well and toss with a drizzle of oil to prevent it sticking.
3 Melt butter in a large saute pan over medium heat; add onion and mushrooms, and saute for about 5 minutes.
4 Sprinkle evenly with flour and stir until the flour is incorporated.
5 Slowly stir in milk and cook, stirring constantly, for five to seven minutes.
6 Add 1 1/2 cup of the cheese, salt to taste, cream, pepper, and nutmeg.
7 Cook and stir until the cheese melts.
8 In a large bowl, mix together the pasta and uncooked spinach leaves.
9 Pour the hot sauce over and mix well.
10 Spoon into a buttered casserole large enough to hold or into a buttered 9x13 baking pan.
11 Sprinkle with the remaining 1/2 cup cheddar, cover with lid or foil.
12 Bake at 375 for 40 minutes, removing the lid/foil for the last 10 minutes.

Cheesy Bacon Scalloped Potatoes

6 slices bacon, cooked and chopped
6 medium potatoes, thinly sliced
3 Tbsp. butter or margarine
3 Tbsp. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1 (12 oz.) can evaporated milk
1 cup water
2 cups shredded cheddar cheese
2 green onions, sliced

Boil potatoes until fork tender; drain.
Meanwhile, heat butter in medium saucepan. Stir in flour, salt and pepper.
Gradually whisk in evaporated milk, water, and 1/3 cup of the bacon.
Cook for about 8 - 10 minutes, stirring constantly until mixture comes to a boil.
Remove from heat. Stir in 1 1/2 cups of the cheese and green onions.
Layer half of the potatoes in an ungreased 3 quart microwave-safe dish. Pour half of the sauce over the potatoes.
Repeat with remaining potatoes and sauce. Top with rest of cheese and bacon.
Microwave uncovered on high power for 2 - 3 minutes until cheese is melted.
